Source of Grapes:
The fruit for our 2019 Pinot Noir Rose MCC was selected from a single vineyard in the Franschhoek Valley.
Winemaking:
Our maiden vintage, 2019 Pinot Noir Rose MCC, was made from a single vineyard growing in the Franschhoek valley. The Pinot Noir grapes are harvested by hand and chilled overnight in our cold room. All our fruit is handpicked in the early morning and handled reductively to preserve the fruit’s integrity. 2days of cold settling follow a light whole bunch pressing according to the traditional champagne method to clarify the juice. A maximum of 500l/ton is recovered at this stage. The juice is inoculated with selected Champagne yeast to enhance freshness and elegance in the basewine. In old French oak barrels, fermentation lasted for 14 days at 16°C. 6 Months of full lees contact was allowed post-fermentation with regular battonage to add richness and texture to the wine. After six months in the barrel, the base wine was stabilised and bottled for second fermentation under a crown cap. This wine spent 12 months in the bottle before disgorging.
Maturation:
Six months in French oak barrel and 12 months under crown cap.
Tasting note:
A modern fruit-forward style of Rose MCC yet true to its varietal origin, Pinot Noir. It is bursting with aromas of red berries, blood orange, peach and smokey lees. The palate is medium-bodied, ample and fleshy, with racy acidy, pretty fruit tones and a youthfully frothy mousse.
